GREEN PEPPERCORNS - freeze dried - Green peppercorns are the mildest of the peppers. Green peppercorns are useful not only for colour but also for the mellowness that is preferable in dishes such as steak au-poivre or with mild flavoured fish. Green peppercorns seem to have an affinity for fruit and are great in salad dressings made with raspberry vinegar and, on occasion, as the secret ingredient in sorbets. Freeze dried green peppercorns absorb liquid quickly so are the best choice if you are adding them to a brine or sauce.
